How do you use a food thermometer correctly?
Use a food thermometer to check internal temperature, rather than judging cooked meat by its color. Choose a probe intended for the food and cooking method, place its sensing area correctly, and wait for the reading to settle. Compare the result with the safe minimum for that food. Wash the thermometer after each temperature check, following its manufacturer's cleaning instructions.
The important question is not just what number appears. It is what that number measures: the food's center, a warmer edge, the cooking container, or only the surface. This guide explains those distinctions using published food-safety guidance and equipment instructions; it is not a hands-on product test.
Which thermometer belongs in the food?
Start with the instructions for the instrument you own. Find its sensing area, insertion depth, response time, temperature range and permitted cleaning method. Write those details on a small card kept with the manual, so you do not have to identify an unfamiliar probe while dinner is cooking.
The University of Maryland's thermometer guide distinguishes digital and dial instant-read models. Its dial example needs 2–2½ inches of insertion and takes 15–20 seconds to read. Those figures describe that thermometer type, not every digital probe.

For a thin burger, a long sensing section must fit sideways through the food; putting only its tip into the top will not provide the intended measurement. Choose equipment whose insertion requirements fit what you cook.
Where should you put the probe?
Check the thick parts, with the sensor inside the food and clear of bone, fat and the cooking container. Take readings in different places. Illinois Extension's kitchen-thermometer guidance says to continue cooking and check again if any reading is below the required minimum.
For separate portions, make a simple checking order so none is missed: for example, left to right across a tray. That order is our organizational suggestion, not a claim that the leftmost piece cooks first.
Do not average away an under-temperature reading. A hypothetical pair of chicken readings, 168°F and 162°F, averages 165°F, but the second location has not reached the poultry minimum. Continue cooking and recheck; the average is not the safety test.
Set up the check where you can handle the food and equipment safely, following their instructions. Do not reach across a hot burner to read a display. Keep hands clear of hot cookware and the probe's sharp point.
Why does the number change as you measure?
There are two questions to separate: has the instrument finished responding, and have you moved to a different part of the food? Wait the model's specified reading time with its sensing area correctly positioned. A changing first reading is not a reason to choose whichever number looks preferable.
UF/IFAS explains that thickness, shape, size and cooking method affect heat transfer. The surface and center do not necessarily reach the same temperature together. A recipe's time estimate therefore cannot replace a properly taken internal reading.
When recording a result, pair the number with its location and unit. “Center, 74°C” is useful; “74” alone leaves both the location and scale unclear. This is the same habit behind careful weighing for baking: understand what the displayed number represents before acting on it.
What temperature are you trying to reach?
These are selected U.S. consumer minimums from FoodSafety.gov's temperature chart, not oven settings.

The rest requirement belongs to the whole-cut row. It is not permission to remove chicken below its minimum and assume later heating will finish it safely.
Keep the full official chart available for foods outside this selection, including the specific reheating exceptions for ham. A shortened reference should not become a rule for every food in the refrigerator.
Can an infrared thermometer replace a probe?
No. ThermoWorks explains that infrared instruments measure surfaces and cannot see through glass or liquids. Pointing one at a covered casserole does not measure its center; a reading through the lid measures the lid's surface.
Use a food probe for internal doneness. A high surface reading cannot clear an unmeasured center. If an instrument combines infrared and a folding probe, identify which measurement function is active before interpreting the display.
How can you check thermometer accuracy with ice?
An accuracy check compares the display with a reference; adjustment is a separate action.
Follow ThermoWorks' ice-bath method: fill a container with ice, then add water to about ½ inch below the ice's top. Let it stand for a minute. If ice floats above the bottom, remove excess water and add ice. Put the sensing portion in the slurry's center, within the instrument's immersion limits, and stir gently without resting against ice, sides or bottom.
The reference is 32°F / 0°C. Compare the settled reading with the manufacturer's stated accuracy tolerance. For an out-of-spec result, repeat the check and follow the manufacturer's service or adjustment instructions.
Can you leave a wired thermometer in the oven?
Only use an instrument designed for that job, within its instructions. Different parts can have different limits.
For example, ThermoWorks' Smoke guidance keeps the display unit outside the oven and warns against probe-cable contact with heating elements, flames, coals and racks. It also identifies excessive cable kinking and prolonged wetting as possible probe-failure causes. Other models have their own ratings.
Before using any leave-in system, identify which component goes inside, which stays outside, and the allowed cable route. Treat error codes through the model's troubleshooting instructions, not as temperature readings.
What must happen between checks and after cooking?
Illinois Extension's temperature guide says to wash the thermometer after each temperature check. Follow the manufacturer's directions for cleaning the probe and protecting electronics. Do not assume permission to immerse the whole unit.
For microwave cooking, FDA guidance calls for covering, stirring and rotating food, and allowing the required standing time before checking internal temperature. Follow the food's cooking instructions; measuring early does not replace its specified standing period.
Temperature checks also do not cancel storage rules. Refrigerate perishables within 2 hours, or within 1 hour when the ambient temperature is above 90°F, and divide large quantities into shallow containers. Keep raw-food plates separate from cooked food unless washed with hot, soapy water.
